Don't know much yet, my son just brought Protopie and Protopie Connect to my attention.

Highly unlikely IMHO. Front end for Raspberry Pi, possibly. If you wanted to do anything with the Pico you'd be writing all the handling firmware from scratch. The Pico doesn't have much in the way of CPU power and tiny RAM compared to a Pi.

Why not stick to WebMite and/or any PC (or Mac)...

A PC dies and you're never up and running in minutes. Android is an absolute breeze. I can pull a fresh device out of a box and be fully up-and-running in 15 minutes.
Most of the time is spent setting-up the device with gmail and other preferences.
In an emergency, the app can be installed on some other device, such as a phone and the client is able to resume production.
Using Bluetooth requires nothing because it's simply a comms port for the MCU. Leave the WiFi to the Android device where you can do sooo much more such as hook-up remotely for training purposes as well as remote diagnostics.
Using something like TeamViewer on a tablet, a client can walk around a machine and show me exactly what is happening, using the device's camera.

Amazing things can be achieved with an adequately buffered Mite + (ruggedized) Android device.  

Mine is ridiculous overkill but soooo nice

I literally posted it after just receiving it from my son. He knows that I put great effort into GUIs and it appeared to be a tool for rapid development.
However, I have since realised that it can't come close to what I already do with a little-known product, "Knob Studio". Great for photo-realistic renderings that are easily animated.
